  • 1 cup onion, finely chopped

  • ½ cup celery, chopped

  • ½ cup carrots, chopped

  • 1 Tbsp. garlic, minced

  • 6 cups beef broth

  • ½ cup Roma tomatoes, chopped

  • ¾ cup barley

  • 1 Tbsp. Italian seasoning

  • 1 Tbsp. dried parsley

  • 3 bay leaves

  • ¼ cup burgundy red wine

  • 2 ½ cups leftover beef, such as steak, pot roast, or roast beef

Instructions:

  1. Rinse and dry the vegetables. Chop the onions and mince the garlic separately. Combine celery, carrots, and green peppers in a bowl. Place tomatoes in another bowl.

  2. Heat a medium-sized pot over high heat. Add olive oil, then cook onions, celery, carrots, and green peppers over medium heat for about 7 minutes.

  3. Stir in garlic and cook for 30 seconds until fragrant.

  4. Increase the heat to high and add beef broth, beef, tomatoes, Italian seasoning, parsley, bay leaves, and wine. Bring to a boil, then lower the heat and let it simmer for 30-40 minutes.

  5. Add barley and cook for another 20 minutes until the grains are tender.

  6. Remove the bay leaves before serving. Enjoy!
